Dining on a Dime: Banana Bread

Today was a rare thing in the world of a college student: a snow day. Naturally, this meant drinking tea and watching movies while pretending to be productive and do homework. It also included a desire to bake, and an immense craving for banana bread. After looking through dozens of recipes, I finally decided to improvise and create my own recipe, based on other recipes I had found (I wanted one with no sugar or butter and no expensive flour replacements). It has no sugar or butter, and while it isn't sweet, I found it particularly delicious! It's thick, hearty, and nutritious, and will be a perfect breakfast combined with fresh fruit.Ingredients:2 cups whole wheat flour1/2 cup quick oats1 teaspoon baking soda1 teaspoon salt1 dash each of cinnamon and nutmeg3 ripe bananas, mashed1/2 cup organic vanilla yogurt1 eggTopping:1 teaspoon flaxseeds1 teaspoon chia seeds1 TBSP oats1-2 TBSP crushed walnuts*First, preheat the oven to 325. Then, combine all the dry ingredients. Then, mix in the mashed bananas, mixed egg, and yogurt. Pour into a lightly greased bread pan, and cover the dough with the topping. Then, bake for roughly 40 minutes, or until a knife inserted in the loaf comes clean. Then, let cool, slice, and enjoy the delicious, healthy banana bread!
